Fed up with those sprouts already? Want something a little different? This has a wonderful sweet, spicy fullness which works so well with the brussels Sprouts. Even the kids liked them! Sprout and bacon always work well as a combination, but Chorizo adds a little something extra…
Ingredients
- 750g Brussels Sprouts
- 250g Chestnuts, roasted, peeled & roughly chopped
- 250g Chorizo, diced
- 250ml vegetable stock
Method
- Peel the sprouts and trim as necessary, Slice each sprout into 3
- Add the sprouts to a roasting tray with the stock and cover with foil. Bake for about 15 minutes in a hot oven (you could also do this in a frying pan)
- Add the chestnuts & Chorizo and stir well. Return to the oven and cook for another 15 minutes of so, stirring occasionally as the chorizo releases its oils
- Serve once the sprouts are cooked to your liking
