Day 6 – Plum & Spinach Smoothie


It’s all starting to come together now. I think I’ve spotted a pattern that works for me.  Let’s try Day 6 with some plums that really don’t taste of much to see what we can squeeze out in the way of breakfast interest…

  • 1 Plum
  • 1 tsp Vanilla
  • 1 ½ Tbsp Oats
  • 1 Tbsp Flax Seeds
  • ½ Tsp Mixed Spice
  • 1 Date
  • 200ml Almond Milk
  • 2 Handfuls Spinach
  • 1 Banana

 

Add all ingredients except the spinach & banana and stir well.  Refrigerate overnight

Stir well & chop in the banana & add a couple of handfuls of spinach and blitz.  Shake half way through if the seeds/oats are stuck to the base of the goblet

Reflections on Day 6

Again, size and texture are perfect, but again I think it could take a little more oats even with the flax seeds.  Maybe 2 Tbsp?  I’ve spinach to use up so added a couple of handfuls – it’s not at all out of place and despite the rather sad khaki colour leaves me feeling quite good after missing out on greens yesterday.  Spinach is definitely the way to go!

The plums I have are really disappointing, which is the main reason they’ve found there way into my smoothie rather than the rest of the family gobbling them up.  The vanilla and dates really help to boost their lack of flavour – I suspect we could cut back on both if I were using better fruit.  Again, it seems like I’ve got a formula that works.  Lets try something a bit more traditional tomorrow before we come t some final conclusions…
