When I was getting my health assessment, the nutritionist said that the best thing I could eat for breakfast was a bowl of porridge and an apple. I hate porridge so didn’t give it too much further thought, but then I considered this – why not make an Apple Crumble and custard smoothie? I love apple crumble & custard! Well, not exactly but it’s the thought that counts…
- 8 Tbsp Rolled Oats
- 1 Tbsp Chai seeds
- 250ml Almond Milk
- 1/2 tsp Vanilla Extract
- 2 Madjool Dates, pitted
- 1/2 tsp Cinnamon
- 1 Apple, cored
Prep by adding all ingredients except the apple to the goblet, stir well & refrigerate overnight
Add the chopped apple, stir again & blend until smooth
Well, this has to be the best so far! The portion size is much better, the flavour is great and it blended first time without assistance. No frozen ingredients today but everything chilled overnight, and this made it much easier to consume on a chilly morning. It’s still too thick though. The apple doesn’t really stand out and could easily take another one, but it’s sweet enough with the dates and the vanilla really works. The grittiness of the oats has gone with the overnight soaking but the chewy bran remains and the real bonus is that it doesn’t feel like I’m drinking cold porridge!

- Add a little extra liquid just before blending?
No greens though – something to consider for tomorrow?
This approach was really easy – just the apple to core in the morning, no real messing about. With all of the oats it felt really filling and for the first time it felt like something I could drink every morning
