Day 2 – Tropical Green Smoothie


I definitely needed something different.  It’s not particularly radical given the ingredients at hand but what could be better than a taste of the tropics first thing in the morning?  I must be getting in to this – I’ve done away with the recipe books & research & I’ve already started improvising…

  • 75g Pineapple, frozen
  • 75g Mango, frozen
  • 75g Coconut flesh, frozen
  • 2 handfuls of Spinach
  • 360ml Coconut Water
  • 1/2 Lime, peeled & frozen

A better process today, filling the goblet up with the frozen fruit then leaves & liquid.

It still took 2 attempts at blending though – will I ever get this right?  I needed to increase the liquid to cut through the block of frozen ingredients, but that did lead to a much better consistency, even though the portion size was now too big.  That said, even Alex wanted some & had a small glass

A definite coconut crunch – will that disappear if it is blended for longer?

I was surprised at the milkiness of the colour, I guess that’s with all of that coconut flesh. No real need to waste coconut water on this in the future if there are other options

Flavour wise, I was expecting more of a punch.  Light citrusy fruits but not particularly distinctive.  I’m left feeling this may have benefitted from just a pinch of salt?

Improvements for next time –

  • Less coconut (maybe half as much?)
  • 300ml liquid, but this doesn’t need to be coconut milk
  • Increase the amount of Pineapple
  • Use a whole Lime
  • Add a pinch of sea salt

Reflections:

Again, I was suitably fulfilled for the morning, even though this wasn’t as bulky as the seed and oat-packed  alternatives.  Easy drinking, turned around in good time, still a bit too big, this has good potential to become a refreshing start to the day
