Tomato & Red Onion Tart

Another great way to use up all of those seasonal tomatoes.  Here I’ve used my 3 favourite varieties – Floridity, Sugar Gloss and Sungold

The slow roasting intensifies the flavours and turns this into a real taste of summer

For the cheese I’ve used a mix of Cheddar and Parmesan. Make your own Puff Pastry if you wish, but sometimes life’s just too short!

Serves 4


  • 50g Butter
  • 2 large Red Onions, thinly sliced
  • 2 cloves Garlic, chopped
  • pinch of Salt
  • 100g grated Cheese
  • 1 pack of ready rolled Puff Pastry
  • 60 Cherry Tomatoes
  • Handful of Basil Leaves, chopped


  • Melt the butter in a pan and gently sweat the onions & garlic with a pinch of salt until caramelised
  • Unroll the pastry onto a baking tray and turn up the edges to retain the filling then sprinkle with cheese
  • Spread the cooked onions evenly over the cheese, then disperse the whole tomatoes evenly over the onions
  • Bake in an oven at 210oC for about 35-40 minutes
  • Serve with a dressed green salad
