Spicy Caribbean Salsa

A spicy fruit based salad to accompany my Caribbean pork dish

This salsa needs assembling quite quickly to prevent the fruit from discolouring – getting it mixed with the lime juice will help retain all of the vibrant colour and flavours


  • 2 ripe Avocado, stoned & peeled
  • 3 firm Bananas
  • Pineapple chunks, diced
  • 1 Mango, stoned & peeled
  • 1 Red Onion, diced
  • 1-2 Red Chillies, seeded & chopped
  • Juice of 1 Lime
  • 1 tbsp Olive Oil
  • Corriander leaves, chopped


  • Dice the avocado. mango and banana carefully, they”l be soft so try not to damage too much
  • Place in a bowl with the remaining ingredients and gently toss
  • Serve immediately or refrigerate until required
