Christmas Fruit Gelato


IMG_0639Based on a really simple Nigella recipe, this is a minimal effort ice cream with a festive twist!

Serves 6

Ingredients

  • 300ml Double Cream
  • 150ml Full Fat Milk
  • 1 tbsp Candied Peel, finely chopped
  • 1 tbsp Dried Sour Cherries, finely chopped
  • 1 tbsp Dried Cranberries, finely chopped
  • 2 tbsp Rum
  • 60g good Dark Chocolate, very finely chopped
  • 8 Meringue Nests, crushed

Method

  • Start by soaking the fruit in the rum.  Half an hour will do, but overnight if possible
  • Whip the cream and milk until light and thick
  • Carefully fold in the chocolate, fruit and meringue.  Try not to knock out too much of the air
  • Line a loaf tin with cling film and spoon the cream mixture in.  Pack down carefully
  • Freeze overnight until set
  • Serve with fresh berries and a chocolate sauce
