Chocolate Vodka

IMG_0636A wonderful chocolate liqueur which you can make yourself in just a few days!  Perfect for a romantic cocktail or a festive celebration.  Try it in a Raspberry Truffle!

Cocoa Nibs are the crushed, shelled cocoa beans used in the making of chocolate.  They are becoming easier to get hold of – I got my supply from the superb York Cocoa House just in time for Christmas! (well worth a visit for anything chocolate related)

Makes 750ml

  • 100g Cocoa Nibs
  • 1 bottle good quality Vodka

  • Tip the nibs into a frying pan and toast of for a couple of minutes, stirring all the time.  The dull grey colour starts to disappear and a shiny chocolate brown appears.  Do not burn!
  • Allow to cool slightly before pouring into a bottle or jar with the vodka
  • Seal and shake well.  Set aside for at least 3 days, shaking daily
  • Strain the contents through a clean muslin cloth and bottle up.  Store a bottle in the freezer and serve well chilled
