Lentil Burgers


I’ve had several attempts at making good Lentil Burgers, but none have been that successful.  Faced with a need for a vegetartian BBQ, I tried again.  This one worked our really rather well!

Serves: 4

Ingredients

  • 200g Puy Lentils
  • 1/2 tsp dried Mixed Herbs
  • 2 tbsp Olive Oil
  • 1 tsp Cumin, ground
  • 1 tsp Coriander seeds, ground
  • 1/2 tsp Chilli Powder
  • 1/2 tsp Salt
  • 1 Onion, finely diced
  • 2 cloves Garlic, chopped
  • 1 large Carrot, grated
  • 1 generous handful cooked White Rice
  • Salt & Pepper to taste
  • juice of 1/2 Lemon
  • a little Cornmeal

Method

  • Add the lentils to a pan of boiling water and simmer until tender (about 20-30 minutes)
  • In a second pan, heat the oil and gently fry the spices for 30 seconds without burning
  • Add the salt, herbs, onion, carrot and garlic and stir well.  Cook gently until soft
  • Drain the lentils and stir into the vegetable mix, along with the cooked rice
  • Take a hand blender and blitz some of the mixture – it will stick to the blades so clean off (carefully) as you go. it should retain some texture – you’re looking for a mixture which will hold together
  • Add the lemon juice and stir well.  Check the seasoning
  • Take handfuls of the lentil mixture and form into balls.  Flatten into ‘burger’ patties and roll in the cornmeal
  • The burger ingredients are already cooked – To serve, heat up a little oil in a frying pan and gently fry until warmed through and the cornmeal is golden.  Alternatively brush with a little oil and bake in the oven
