Smashed Squash & Beans
Smashed Squash & Beans with Quesadillas

A nice sweet accompaniment to spicy Mexican dishes.  Maybe add a little chopped red chilli for a warming kick…

Serves 3



  • Melt the butter in a pan on a medium heat and add the squash, cumin and garlic.  Stir well and cover
  • Sweat the squash until it starts to soften.  Stir to prevent sticking, adding a little hot water if necessary.  Be careful not to break up the squash
  • After about 15-20 minutes, the squash will be softening.  Add the beans and stir again.  Cover and return to the heat for another couple of minutes to allow the beans to heat through
  • Remove from the heat and roughlysmash with a form – you’re not looking for a smooth mash, you want to retain some lumps.  Check seasoning and add salt & pepper to taste
  • Serve with your favourite Mexican dish – try it with Chicken Quesadillas!

    I’ve never actually tried beans and squash together, I might have to try this sometime!

    1. It’s a really good combination which complements the spice and cheese really well. It should work equally as well with sweet potatoes. Give it a go – you won’t be disappointed!
