Still stuck with all of those naked limes from your Limettacello making?  How about an easy muffin recipe?  Another great recipe for the kids!  Top with icing or a lime-drizzle if you wish

Makes 12


  • 250g Plain Flour
  • 225g Castor Sugar
  • 3 tsp Baking powder
  • 1/2 tsp Salt
  • 2 Eggs
  • 70ml Milk
  • 70ml Vegetable Oil
  • 70ml Lime Juice


  • Sieve all of the dry ingredients into a large bowl and mix.  Make a well in the centre
  • In a jug, break the eggs and add all of the liquid ingredients.  Mix well with a balloon whisk
  • Tip the egg mixture into the well in the bowl.  Using the whisk, gradually beat in the flour until you have a thick, smooth batter
  • Spoon the batter into a muffin tray.  NB: You can line with paper cases if you wish, if note see note below!
  • Bake at 190ºC for 20-25 minutes
  • Remove when well risen and golden brown and allow to cool

Note:  If you haven’t used cases or paper to line the muffin tray, use a palette knife to carefully loosen and remove the muffins soon after they come out of the oven, whilst still hot – you’ll struggle to get them out of the tray once they’ve cooled down
