Piri Piri Sauce

Well, sort of.  Piri Piri sauce should be made from red Piri Piri peppers (obviously) or Bird’s Eye chillies, but this is made from Cayennes so it isn’t quite as hot.  Piri Piri sauce is a basic hot sauce or Portuguese origin

It’s really easy to make as there is not cooking involved – just through it all in a blender, blitz and bottle.  Just remember to shake before use.  Makes a great marinade for chicken or fish, and will keep for a few months


  • 8 Cayenne Peppers, stalks removed (but retain seeds)
  • 4 cPiri Piri Sauceloves Garlic
  • 100 ml Red wine Vinegar
  • 100 ml Distilled (White) Vinegar
  • 300ml Olive Oil
  • 1/2 tsp Salt


  • Throw everything into a blender and blitz
  • Bottle in sterilized jars or bottles
  • Leave for at least a week before  use to allow the flavour to develop
  • Store in a cool dark cupboard or in the fridge
