Creole Style – Chilli & Tomato Sauce

Creaole-style Tomato Chilli SauceThis is great for pasta, and the thyme makes this a good addition for Cajun and creole style dishes where a rich punch is required.  Subtle enough to use with fish or vegetarian dishes, this is also great with chicken or rich stews.

Makes approx 750 ml


  • 20 Cayenne Chilli Peppers, stalks removed
  • 2 Medium Onions, chopped
  • 5 cloves Garlic, chopped
  • 1 Tbsp Fresh Thyme
  • 5 medium Tomatoes, chopped
  • 1 tbsp Soft Brown Sugar
  • 1 tsp Salt
  • 100 ml Cider Vinegar


  • In a little oil, gently sweat off the onions, chilli and garlic for a couple of minutes
  • Add the thyme, tomatoes, vinegar, sugar and salt and bring to the boil
  • Simmer gently for approximately 15 minutes
  • With a hand blender, blitz the contents of the pan to get a smooth paste.  Taste and adjust seasoning
  • Return to the heat for another 15 minutes to develop the flavour and a thick ‘pouring’ consistency.  Stir occasionally to prevent sticking.  Add a little water if necessary
  • Allow to cool and store in sterilized bottles.  Should keep in a cool dark place, unopened for 6-12 months
  • Refrigerate once opened and use within a couple of months or so
