Cranberry Mincemeat
Cranberry Mincemeat - Ready to use

If you’d like an alternative to the traditional mincepies this Christmas, why not try making this Cranberry ‘mincemeat’?  It’s not so sickly sweat, and keeps well in a sealed jar.  Make sure you use the best quality candied peel – if you have the time, check out my own recipe!

  • 1kg Fresh Cranberries
  • 1 large Apple, chopped into 2-3cm cubes
  • 100ml Golden Syrup
  • 1 tsp Mixed Spice
  • 100g Butter, diced
  • 100g Candied Orange Peel, chopped
  • 2-3 Tbsp Dark Rum
  • 300g Soft Brown Sugar

  • In a roasting tin, mix together the cranberries, apple, syrup, spice and butter with your fingers
  • Place in a preheated oven for around 180°C for 30 minutes.  Shake the tray half way through cooking
  • Remove from the oven and stir in the peel, rum and sugar (It may be easier to do this in a bowl).  Stir well and leave to cool
  • Transfer into sterilised jars and seal or use in pies and tarts
