Leek & Chard Chutney


OK.  I promise this will be the last pickle of the year.  This was really an afterthought.  The Traffic Light Pickle generated an excess of bright pink vinegar which tasted just great.  Instead of throwing this out, I raided the garden for what on first sight may seem like a really random mix, but I have no doubt will become a classic…

Makes 2 * 1lb jars

Ingredients

 

  • 400ml spiced & reduced pickling vinegar*
  • 4 tsp sugar
  • 100g Chard Stalks, chopped
  • 1 Leek, finely sliced
  • 75g Green Cherry Tomatoes, quartered
  • 75g ripe Cherry Tomatoes, chopped
  • 1 large Apple, cored & diced
  • 1 1/2 tbsp Thyme leaves
  • Black Pepper
  • 2 & Sterilised Jars & Lids

Method

 

  • Bring the vinegar to the boil & add sugar. Stir well to dissolve
  • Add all remaining ingredients and stir.
  • After 2-3 minutes, transfer to sterilised jars, seal and leave to cool
  • Store in a cool dark place for at least 4 weeks
