Salt is a very important ingredient in spicy cookery. By cutting down on the recommended quantity, you will change the balance and effect of spices and strong flavours in the recipe.

We should all be looking to decrease the amount of salt in our diets, and I like my meals no more salty than the next man, so take heart from the fact that only essential amounts of salt are included in these recipes.
